Pea soup
INGREDIENTS
- 1 onion
- 2 garlic cloves
- 1 large potato
- 300 grams of peas
- 750 ml vegetable broth
- Salt
- Pepper
- Fresh herbs
- 1 tbsp lemon juice
METHOD
- Peel and dice the potatoes into small cubes.
- Finely chop the onion and garlic cloves.
- In a pot, heat a tablespoon of oil. Add the onion and sauté, stirring occasionally, until it becomes translucent. It’s fine if the bottom of the pot browns slightly—this will enhance the flavor.
- Stir in the minced garlic, then add the diced potatoes and peas. Pour in the vegetable broth and season with salt and pepper.
- Simmer the soup over low heat for about 20 minutes, or until the potatoes and peas are tender.
- Remove the pot from the heat, add a tablespoon of lemon juice, and blend the soup until smooth.
