Pea soup

INGREDIENTS

  • 1 onion
  • 2 garlic cloves
  • 1 large potato
  • 300 grams of peas
  • 750 ml vegetable broth
  • Salt
  • Pepper
  • Fresh herbs
  • 1 tbsp lemon juice

METHOD

  1. Peel and dice the potatoes into small cubes.
  2. Finely chop the onion and garlic cloves.
  3. In a pot, heat a tablespoon of oil. Add the onion and sauté, stirring occasionally, until it becomes translucent. It’s fine if the bottom of the pot browns slightly—this will enhance the flavor.
  4. Stir in the minced garlic, then add the diced potatoes and peas. Pour in the vegetable broth and season with salt and pepper.
  5. Simmer the soup over low heat for about 20 minutes, or until the potatoes and peas are tender.
  6. Remove the pot from the heat, add a tablespoon of lemon juice, and blend the soup until smooth.
